I would. With the destiny knot, the knotted parents Ivs are garented, and i believe the everstone gives the child the stoned parents nature is garenteed. the rest is up to chance and luck.
So there is nothing more I can do, and if I get lucky it will have the IVs?

Yup. I recommend getting a kid with 3 max IVs, and then giving that the knot and breeding it with the everstone parent. and keep doing that until you get 6IVs maxed out.
